Know Fermentation: Cheese Tasting with Market of Choice

Market of Choice Cheese Steward Chef John Butera will lead participants through a live virtual cheese tasting of five tasty cheeses:

Ash-covered soft-ripened goat's milk cheese from northern California.

Night Walker
Aged cow's milk cheddar bathed in J.Henry & Sons Bourbon from Wisconsin

An aged Gouda-style raw milk goat cheese from Wisconsin.

Dorothy's Keep Dreaming
Creamy and Tangy bloomy rind cow's milk cheese from Illinois

Blue Stilton
Classic blue veined cheese from England

Chef John Butera has been a cheese steward at Market of Choice since 2016. Prior to moving to Bend, John was the Director of Dining Services for the Academy Group in Boulder, Colorado and served as managing Chef Instructor for Work Options for Women, an American Culinary Federation Education program based in Denver.
